Spaghetti Bolognese

Spaghetti Bolognese (6-8 pts per serving) is a classic dish that does not need any fancy introduction. Traditionally, this tomato based meat sauce can be heavy but it doesn’t need to be. I’ve substitute this recipe to give that meaty texture and taste without the calories and fats in a heavy meat dish. The total point for this dish is 6- 8 points per serving. It is yummy!

Bolognese Sauce (4-6 servings)

1. Lean Ground Beef    ½ pound    9 pts     (also try turkey if you like to have more meat)
2. Carrot        2 ½ cup        2pts
3. Celery        2 ½ cup        0pts
4. Onion        1 large        0.5pts
5. Garlic        5 clove        0.5pts
6. Ground Nutmeg    1 tbs        0pts
7. Oregano        3 tbsp        0pts
8. Italian Herb        1 tbsp        0pts
9. Beef bouillon cubes    2 cubes        0pts
10. Canned Tomato Paste    1 can        2pts
11. Canned Tomato Stew    1 can        2pts
12. Any kind of Red Wine 1 cup         2pts
13. Whole Wheat Spaghetti    1 cup   3pts (I usually make more for the whole family but for the purpose of this recipe, I’m counting the points for 1 serving)

Preperation: Take a chopper and chop up the carrot, celery, onion, and garlic until it is in fine pieces.  Keep each ingredient separate. Open 1 can of tomato paste and 1 can of tomato sauce. I like my sauce chunky but you can use any kind you like.

Cooking Bolognase Sauce: Take a large pot, spray some olive oil. Stir fry the garlic and onion until the onion turn clear. Add lean meat (you can substitute this with turkey as well).  Cook the meat with the garlic and onion to bring the flavor into the meat. Add 2 cubes of beef boullion and herbs (nutmeg, oregano and italian herb mix). Stir until it is completely blended. Add in the celery, carrot, tomato paste, and tomato sauce. Stir thoroughly. I like to also add 1 cup of red wine. Simmer this pot of sauce in warm-low heat for 2 hours. Stir the bottom periodically to prevent from burning. There are about 4-6 servings. It’s about 4 pts per serving, less if you use turkey.

Cooking Spaghetti: I sometimes like to make fresh pasta but this time, I used the standard whole wheat pasta from the grocery store. Boil hot water with a couple spoon of sea salt. Put the pasta into the boil water. Cook the pasta to the texture to your preference. 1 cup is 3 points.
